Oh no! Are your friends hitting you up at the last second looking for a place to eat and drink while the game is on today? Most likely! We all know that a Superbowl party with no food is just unacceptable! Hurry up and try these two easy recipes before the game starts. They are easy to make, easy to eat, and will leave your guests wanting more! Happy game day everyone, now get cooking!
Guacamole
3 avocados
1 jelapeno (seeded and minced)
2 springs of green onions (finely chopped)
Handful of cilantro with stems (finely chopped)
2 limes
Salt
Scoop avocado pulp into a large bowl and squeeze juice from both limes, toss to coat.
Fold in chopped green onions, jalapeno and cilantro.
Season liberally with salt (guacamole loves a lot of salt) and mash it with the fork; let it seat for 30 minutes.
Serve with tortilla chips or as a condiment to fish tacos.
Fish Tacos with orange slaw
1 lb cod cut into 4” long strips
Corn taco tortillas
1 small head of shredded, green cabbage
2 small oranges (broke into small pieces)
Juice of 1 orange
Juice of 1 lime
2 spings of green onion (finally chopped)
Handful of cilantro with stems (finely chopped)
2 tablespoons of toasted sesame seeds
Olive oil
Wash and dry cod, season with salt and pepper.
Combine shredded cabbage with cilantro, green onions and pieces of orange; add orange and lime juice; season with salt and pepper to your liking, let it seat for 30 minutes.
Heat up olive oil in a frying pan until very hot, fold fish into hot oil and cook for about 2 minutes on each side; wipe access of oil with paper towel and set aside.
Warm up tortillas in the microwave, gas stove top to or in the oven.
Serve one piece of fish on each tortilla, garnish with the slaw.
